The royal feast is affordable for everyone

Sweet rice (khir)

Properly cooked sweet rice will leave no one indifferent. Serve it at room temperature or chilled - the colder the kheer, the tastier it is.

- 100 g Ordinary Short Grain Rice

- 0.25 tsp ground cardamom

- 60 g chopped nuts - hazelnuts, almonds or cashews

Go through and rinse the rice. Soak it in water for 25-30 minutes, then drain the water. Boil the cardamom and saffron milk, add the washed rice and cook, stirring occasionally, over medium heat for about an hour, until the mixture resembles heavy cream. Add sugar and nuts and cook for a few more minutes, stirring occasionally.

Semolina halva

In every state of India, the word "halva" means its own dish, which often has nothing in common with others. Suji halawa is a Bengali dish. It is prepared for holidays and family celebrations. If you want, you can skip the spices and replace the orange zest with lemon zest. Or vice versa - exclude the orange, then milk can be used instead of water.

- 0.25 tsp each ground cloves, nutmeg and cinnamon

- 1 tsp. crushed cardamom seeds

- 0.25 tsp saffron stamens

- 1/3 cup (50 g) yellow raisins

- 0.5 cup (125 ml) ghee or unsalted butter

- 1 cup (190 g) fine semolina

- 0.25 cup (40 g) almonds, split into halves

Combine water with sugar, ground spices, cardamom seeds, saffron and orange peel in a heavy 2 liter saucepan. Put on low heat and, stirring, dissolve sugar. After adding heat, bring the mixture to a boil and simmer for a few minutes. Strain through a sieve, add raisins and set aside with a lid. Heat ghee or butter in a large teflon-lined saucepan over medium-low heat. Add the semolina and, stirring constantly, cook for about 10 minutes, until the cereals are swollen and warm golden brown. Remove the pan from heat. (To make white halva, adjust the heat to very low and fry the semolina for half an hour, stirring occasionally, until the cereal swells and is slightly browned).

Stirring continuously, pour the syrup into the semolina in a thin stream. At first, the mixture will spray, but soon, as soon as the cereal is saturated with moisture, it will stop. Put the pot on very low heat and, stirring constantly, cook for up to 10 minutes, until the cereal absorbs all the liquid and becomes airy.

Serve hot or warm.

Sweets "Just a miracle"

Both adults and children love these delicious sweets. They can be stored in the refrigerator in an airtight container for up to 4 days.

- 0.5 cups (125 ml) unsalted butter at room temperature

- 2/3 cup (60 g) powdered sugar

- 1 ¾ cup (220 g) milk powder (or as needed)

- 1 tsp milk or cream (or how much you need)

A few drops of aromatic essence or 2 tbsp. l. Chopped nuts or Combine butter and icing sugar in a bowl and whisk into a light, airy cream. Add milk powder and milk or cream (adjusting proportions if necessary) and knead with your hands until a medium-soft fudge is obtained. Flavor with essence, nuts or fruit jam and stir well. Wash and dry your hands, then roll the fondant into smooth balls. You can also roll whole hazelnuts or other nuts into it.
