Meat cake

Thinly beat off pieces of veal. Finely chop a lot of onion, grate cheese (also a lot). Grease the mold and lay the meat, onion, cheese, mayonnaise in layers. There should be at least three such layers, but in general, the more layers, the tastier. The meat is beaten very thinly until it begins to creep, do not forget to salt and pepper each layer. Bake in the oven.

"Village" salad

300 g boiled beef, 1 small potato, 2 small pickled cucumbers, salt, pepper, 1 tbsp. l. sour cream, parsley, tomatoes, mustard.

Break the beans into pieces and simmer until tender in a little water with the addition of vinegar and salt. Chop the onions. Boil the potatoes in their skins, peel them, cut them into thin slices. Cut the herring into strips. Stir the products, put in a salad bowl, season with mayonnaise. Decorate with green salad.

Fried eggplant with garlic cold appetizer

500 g eggplant, 50 g olive oil, 4-5 cloves of garlic, salt.

Cut the eggplants lengthwise into slices, soak in salted water for 30 minutes (1 tablespoon of salt per 1 liter of water), squeeze and dry, roll in flour and fry on both sides in oil, salt.

Put the fried eggplants on a dish, sprinkle with crushed garlic on top, sprinkle with dry white wine, place in the refrigerator for 3-4 hours. Serve cold.

Potatoes stuffed with shrimps

250 g shrimp, 250 g mushrooms, 2 tablespoons flour, 7-8 potatoes, sauce, salt to taste.

Lightly boil shrimp necks in a little oil, fry fresh or canned mushrooms cut into slices separately. Wash potatoes of the same size and bake in the oven, cool them, cut off the tops and carefully remove the core. Mix the prepared shrimps and mushrooms with hollandaise sauce, fill the potatoes with the resulting mass and bake them in the oven until golden brown. Serve hot.

Sauce: Pour 4 raw egg yolks into a bowl with a thick bottom, add 50 ml of water, butter cut into small pieces (100 g) and cook, stirring continuously, until a homogeneous mass is formed. Then pour in lemon juice (50 ml) and strain the finished sauce.

Stuffed chicken legs

Can be served both hot and cold. For cooking, we take the legs, it is only important that the cut is even, and not torn. The number of pieces depends on your capabilities, it is better to take a small size, but larger. Rinse and dry the legs. At the bottom of the leg, cut off the bone so as not to tear the skin. Next, carefully remove the skin so that a pouch is obtained. We have "skinless legs" left, they need to be boiled until half cooked and cooled. Then separate the meat from the bones and turn it through a meat grinder. Chop finely and fry the onion (2-3 pieces, depending on the number of legs), you can add garlic, spices, pepper, just don't overdo it! Mix the onion with the rolled meat until smooth. Gently stuff this minced meat into leather bags and give them the shape of a leg (if you wish, you can sew a bag). Rub them with salt, pepper, spices and fry until tender. The dish is ready!

Baked salmon in sweet mustard sauce

2 tbsp. tablespoons of olive oil, 1/2 cup mustard seeds, 3 tbsp. tablespoons of mustard, 1 tbsp. spoon of sugar, 3 tbsp. tablespoons of water, 1 teaspoon of vinegar, 1/4 teaspoon of salt (preferably large), 1/4 teaspoon of ground black pepper, 4 fillets of salmon, pink salmon or chum salmon, 150 g each.

1. Heat oil in a small skillet over low heat. Add mustard seeds and stir in oil. Cover the skillet with a lid and simmer until the seeds are swollen and bursting from the heat. Remove the skillet from heat, but keep the lid on until the seeds have stopped bursting, then pour them into a bowl.

2. Pour sugar into the same frying pan and put it on low heat so that the sugar melts and darkens. Pour water into the pan and dissolve the burnt sugar in it. Pour the mustard seeds with the resulting syrup, add table mustard, vinegar, salt and sugar. Put salmon fillets in this marinade and refrigerate for 20 minutes.

3. Preheat oven or grill. Place the fish fillets on a foil-lined baking sheet and gently place mustard seeds on each piece. Bake in the oven for 5 minutes, then cover the fish with foil and continue baking until tender.
