For 15 years now I have been a member of the St. Petersburg club "Green Gift", for a long time I have been engaged in gardening and horticulture. Probably, my love for land and growing plants was passed on to me through genes. The fact is that my grandfather, Alexei Smirnov, was the manager of a large estate near Velikie Luki. He passed on his love for the land to my father, Ivan Alekseevich Smirnov, and he, in turn, taught me to love and understand the land. On the outskirts of the city in the gardening "LOMO", there is a small piece of land. And there I am in my element. I grow good harvests of vegetables, fruits, berries.

Our family has always cooked well, made a lot of preparations for the winter and loved to treat guests. This tradition has been passed down from generation to generation. I started collecting recipes a long time ago, I take them from my friends, I copy from books and magazines. First, I cook and try. I write down what I liked in my "golden book", it is more than 50 years old.

Now I want to offer readers several recipes for delicious dishes and preparations for the winter, which I often use myself.

Salad cabbage "Larisa". This recipe is from my friend Larisa Ivanovna, hence the name of the blank.

You will need: white cabbage - 5 kg, salt - 4 tablespoons with a slide, granulated sugar - 350 g, carrots, onions and bell peppers - all 1 kg each, refined vegetable oil - 500 g, vinegar 9% - 300 g.

We chop the cabbage, add salt and sugar, grind a little until juice forms. Three carrots on a coarse grater, chop the onion in half rings, pepper - in cubes. We combine everything and add oil and vinegar. We put the resulting salad in three three-liter jars and leave to stand for three days. During this time, the bitterness will go away. Banks need to be put on plates, as the juice will come out. After that, they must be closed with plastic lids and stored in a cold place. It turns out an excellent appetizer, as well as a dressing for sour cabbage soup with pork.

Rustic cucumbers. They are harvested in three-liter cans, a recipe from Lyudmila Alexandrovna. Cucumbers are crispy, aromatic and eaten very quickly. The secret of the deliciousness of these cucumbers in a 70 ml faceted stack, the measurement accuracy depends on it.

Put a black currant leaf, dill inflorescences, 7 black peppercorns, 5 garlic cloves, a piece of horseradish root in a three-liter jar. Then we put the pre-soaked cucumbers. We fill them with boiling water twice, then add one stack of salt, sugar and 9% vinegar to the liquid drained from the jar, boil this brine again and pour it into the jar. We roll it up, turn it over, cover it to keep warm and leave it until it cools completely.

Lightly salted cucumbers in a plastic bag without water. This recipe was shared by a woman who is a member of our club. When tasting her cucumbers, he was appreciated by everyone. Try to cook this way, dear readers.

So, cucumbers - 1 kg, dill - a bunch, garlic - 5-6 cloves, salt - 1 heaped tablespoon, sugar - 1 tsp.

We take small cucumbers, cut their tips crosswise by about 1 cm, put them in a tight plastic bag. Chop the dill, garlic there, add salt and sugar, tie it tightly and shake it a little. The package lies on the table for 24 hours and in the refrigerator for another day. Make sure that as soon as a delicious smell appears, your cucumbers do not disappear without your knowledge, and, interestingly, without a trace. Young zucchini can be prepared according to the same recipe.

Cauliflower - salting. The recipe is taken from an old Bulgarian cookbook. Bulgarian pepper Kaba - 5 kg, carrots - 1 kg, cauliflower - 2 kg, sugar - 0.5 kg, coarse salt - 1 glass, vinegar 9% - 250 g.

Cut the pepper into cubes, carrots into slices, cabbage must be disassembled into inflorescences. We put everything in an enamel basin, add salt, sugar, mix and leave overnight. In the morning, pour the juice into a saucepan, add vinegar and boil for 4-5 minutes, cool and pour vegetables. We store under plastic covers. It turns out a good snack for meat.

Adjika "in Leningrad". Tomato paste 30% - 0.5 l can, garlic - 200 g, bell pepper - 5-6 pcs., Hot red pepper - 0.3 tsp, black ground pepper - 1 tsp, coarse salt - 1 tbsp … the spoon.

Pass the pepper through a meat grinder, mix all the ingredients, put in jars, store in the refrigerator. In the spring, when everyone has vitamin deficiency, it is very useful to add adjika to the daily diet.

Aronia raisins … Rowan black-fruited - 1 kg, sugar - 400 g, citric acid - 1 tsp.

Put everything in a saucepan, add 0.5 cups of water, boil for 10 minutes, let cool and strain. Scatter berries on paper in a well-ventilated area. When the berries are dry, collect them in a jar and store under a plastic lid. Although it will not be possible to save for a long time, children eat this "raisin" with pleasure.

Green tomatoes in Kazakh style. On a bucket of green tomatoes, take 5 pods of hot and sweet red pepper, 3 heads of garlic.

We pass all the pepper and garlic through a meat grinder and pour 1 cup of 9% vinegar. We cut each tomato into 2/3, put inside 1 teaspoon of the resulting mixture and put them in sterile jars. Add 1 aspirin tablet to each jar.

Cooking brine: 200 g of salt for 4 liters of water, 1.5 cups of sugar, 5 bay leaves, 2 large branches of dill and tarragon. We boil everything and fill the jars with hot brine, roll up. We keep it at home. An excellent snack with vodka.

Tkemali. This recipe is from Svetlana Vladimirovna. You will need: homemade plum - 1 kg (seedless), hot pepper - 1 pc., Garlic - 100 g, sugar - 100 g, salt - 1 tbsp. spoon, tomato paste - 1 tbsp. spoon with a slide.

Scroll all products in a meat grinder and cook for 20 minutes, stirring occasionally. Spread hot in sterile jars, roll up. Suitable as a sauce for meat.

Liqueur "100" … We take 100 pieces of black currant leaves, raspberries, cherries and 100 black chokeberries, add 1.5 liters of water and boil for 20 minutes in an enamel bowl. Then let the liquid cool slightly, filter it, squeeze the leaves and berries. Add 0.5 kg of sugar to the resulting broth, 1 tbsp. a spoonful of citric acid, boil for 10 minutes, remove from heat and add 300 g of alcohol or 600 g of vodka. The output of the finished product is 3 bottles of 0.7 liters each. The liquor is infused until the New Year.

Pancakes are fast. And, finally, a recipe for quick and delicious pancakes. Milk - 2.5 cups, flour - 1.5 cups, eggs - 2 pcs., Salt - 3/4 teaspoon, sugar - 3 teaspoons, vegetable oil - 0.3 cups.

We mix all the ingredients with a mixer, heat the pan and grease it with oil only once. Then we fry without adding oil. It turns out 17 pancakes.
