Growing eggplants on our site for many years, we have always, as a rule, preferred the traditional dark purple varieties. It is no coincidence that the people called them "blue". Recently, seeds of varieties with white, yellow, green color, variegated have appeared on sale.

The fruits of white-fruited varieties are good because they retain a delicate taste, they are practically without bitterness up to biological ripeness, even in very hot, dry years. And they give a good harvest. Previously, such varieties were considered exotic and more decorative than vegetable, because there were so few of them. Now there is a choice and it is pretty good. And we use it. Here are some of those that have been tested on our site. They have white fruits.

In the Lebedinny variety, the fruits ripen in 100-130 days, they are elongated pear-shaped, weighing 150-300 grams, very well stored. Bushes 100-110 cm high with medium-sized leaves.

More massive (250-270 g) elongated (up to 20 cm) eggplant fruits with a very delicate, shiny skin in the Snezhny variety. They ripen in 100-105 days under a film in a greenhouse or in a tunnel, the yield is 5-6 kg / m2. The plant of this variety is indeterminate, 90-100 cm high, with medium-sized light green leaves.

Spicy mushroom flavor in the white egg-shaped fruits of the White Egg variety and in the elongated spherical fruits of the Mushroom Taste variety. Fruit weight in these varieties is up to 100 grams. They mature in 110-115 days. The bushes of the White Egg variety are low - up to 0.8 m, and in the Taste of mushrooms variety - a little higher and more spreading.

Another variety of eggplant White Night is mid-season, the fruits ripen in 115 days. The plant is up to 75 cm high, elongated pear-shaped fruits, 17-25 cm long, 7-10 cm in diameter, weighing up to 280 grams. The pulp is snow-white without bitterness. This variety possesses complex disease resistance.

But the Pelican variety amazes with its high yield and interesting fruit shape. The plant is up to 1 meter high, beautiful, fruits weighing 200-250 grams, 15-18 cm long and 4-6 cm in diameter, saber-shaped.

I will name two more new eggplant varieties with a rare fruit color and a good taste without bitterness: Early variety, ripens in 100-105 days, Matrosik variety is named so for its striped fruits. He has alternating lilac and white stripes. They are oval in shape, weighing 140-150 grams, very tasty. Semi-stemmed bushes with rather large leaves.

The Othello variety has a light pinkish-lilac fruit, barrel-shaped, weighing up to 300 grams. The skin and flesh are tender, the taste is excellent. He has semi-stem compact bushes with large leaves, the variety does not require shaping, the yield is 4.5 kg / m2.

Of the green-fruited eggplants, in my opinion, the Zelenky variety is interesting - early maturing, ripens in 110 days; its bush is up to 70 cm high, the fruits are green, elliptical, like large cream, the flesh is without bitterness, loose, white with a slight greenish tinge and with a characteristic "mushroom" taste. Fruit weight up to 300 grams.

The Emerald variety also has a similar color - early, green with an emerald tint, fruits weighing 300-400 grams, they are beautiful, round-barrel-shaped.

The Chinese Green variety ripens up to 100 days, its bush is up to 50 cm high, compact, does not require shaping, fruits weighing up to 400 grams. They are round-elongated, in technical ripeness they are green, in biological ripeness they are bronze-yellow, the flesh is white, tender, without bitterness.

Of course, ordinary eggplants (blue ones) are more productive, but it never hurts to have several different varieties in the garden.


All of the above varieties are well grown in our greenhouses and in the open field. We usually sow seeds for seedlings at the beginning of February, since eggplant seedlings, like peppers, require a longer growing period.

When planting in a permanent place, it must be remembered that to set more fruits, a more spacious planting is required: in a row 50-60 cm, in aisles - 60-70 cm. Since eggplants are a self-fertile culture, then on one bed you can grow many varieties, and they will not be pollinated. If you want to collect your own seeds, you need to leave more complete fruits, let them ripen well.

Then peel, cut into small pieces, put in a glass dish indicating the grade. Allow the pulp to soften to a "black mass" for 7-10 days, mash it by hand and rinse in water, gradually draining the unusable ingredients. In this case, good full-fledged seeds will immediately settle to the bottom, and all the remaining debris will merge with water. Then the seeds need to be dried on paper and poured into envelopes.
