Zucchini pancakes

For 2 servings you will need:

Wash the zucchini, dry and grate on a coarse grater. If the zucchini is not young, be sure to cut off the coarse outer rind and remove the seeds. Add the grated zucchini to the egg mass and stir. Add flour and mix well again. The mass should be neither thick nor liquid. Put the pancakes in a preheated pan, fry for 5-7 minutes on one side and the same amount on the other.

Zucchini jam

The taste is amazing! Those who try this jam for the first time can never understand what it is made of. And everyone at first thinks that it is from pineapple or something else exotic.

You will need: zucchini (young) - 1 kg, sugar - 800 g, lemon - 1 pc.

Cut the courgettes into cubes. Cover them with sugar and leave for a while until the sugar is completely dissolved (more convenient overnight). Cook for half an hour. 15 minutes before the end, add the lemons, which need to be peeled and finely chopped (remove the seeds). Put the hot jam in jars and roll up. Zucchini should be used only when young, you do not need to peel them and do not add water at any stage of the process.

Fried zucchini

Probably, there is no simpler dish than fried zucchini. Zucchini are simply cut into circles, rolled in flour and fried in vegetable oil. The main thing when frying is to leave the zucchini a little damp, and then you can cover them with foil and let them "reach", otherwise the zucchini can turn into porridge. You need to fry the zucchini so much that they can be eaten right away - they are not stored. You can serve fried zucchini as an independent dish - with sour cream. Or serve them as a side dish for meat. Young zucchini can be fried along with the skin; the peel of "old" zucchini must be peeled.

You will need: young zucchini - 2 pcs., Flour, salt, vegetable oil.

Wash the zucchini. Cut off the edges. Cut the young zucchini into 1 cm wide slices. Salt on both sides. Dip the zucchini circles in flour. Put in a frying pan with heated vegetable oil. Quickly fry the courgettes on both sides. In this case, the zucchini should remain slightly damp. Place the fried zucchini on a platter.
