Now let's return to those dishes that very often appear on our table. As a rule, unlike pancakes, bread yeast is often added to pancakes and pancakes. In my opinion, potato pancakes are very close in composition to pancakes, but in the former they try to introduce fewer components so that the potatoes prevail over the rest. These potato dishes are best cooked in thick-walled pans. Pancakes stuffed with mushrooms

Add flour, salt to the potato mass, mix everything. Rinse dried mushrooms, soak in water for 2-3 hours, cook. Finely chop the boiled mushrooms (you can lightly fry in vegetable oil). Cut lard (bacon) into small cubes, fry, add sautéed onions, 1-2 tbsp. l. mushroom broth (broth) to make the minced meat more juicy. In a frying pan with warmed-up fat, put the potato mass with flat cakes, minced meat on top, then potatoes. Fry pancakes on both sides, transfer to a pot, pour sour cream and bring to readiness in the oven.

Required: 10 potatoes, 2 tbsp. l. flour, 4 tbsp. l. sour cream or butter, 1/3 cup of mushroom broth, salt. For minced meat: 30 g dried mushrooms, 80 g bacon, 2 onions.

Fritters stuffed with fish

Add flour, salt, egg to the mass: mix. Pass the fish fillet through a meat grinder, fry with onions and boiled mushrooms, then add salt, pepper, finely chopped egg: mix. Put the potato mass with flat cakes on a hot pan, put the minced meat on them, cover with potatoes on top and fry until golden brown on both sides. Place in a pot, cover with oil and put in the oven. Sprinkle the finished dish with finely chopped herbs.

Required: 10 potatoes, 1 egg, 5 tbsp. l. oils, herbs, salt. For minced meat: 250 g fish fillet, 15 g dried mushrooms, 1 egg, 2 onions, 2 tbsp. l. oils, pepper.

Pancakes stuffed with meat

Add flour, egg to the mass: mix. For minced pork, mince the pork, add fried onions, salt, pepper: mix. Put the potato mass with tortillas in a hot frying pan, put minced pork on each of them, and cover with the potato mass on top. Fry until golden brown on both sides, put in a roaster and put in the oven for 10-15 minutes. Serve the dish with fried bacon.

Required: 12 potatoes, 1 egg, 2 tbsp. l. flour, 100 g bacon, 2 tbsp. l. oils. For minced meat: 400 g pork, 2 onions, 1 tbsp. l. oils, pepper.

Fry pancakes from the salted mass. Put the finished pancakes in a greased rooster, put them with lard, seasoned with salt and pepper with the addition of chopped garlic. Put the roaster in the oven for 20-25 minutes.

For the dish you need: 12 potatoes, 2 tbsp. l. vegetable and butter, salt. For minced meat: 400 g of pork, 4 cloves of garlic, pepper.

Green pancakes

The mass is mixed with eggs, a slice of white bread, moistened, squeezed and mashed with a fork (instead of 2 tbsp. L. Oatmeal), salt, pepper are added. You can put a little crushed garlic in the pancakes, as well as chopped herbs. This mixture is poured 1 spoonful into a frying pan with heated vegetable oil.

Required: 8 potatoes, 2 eggs, 1 slice of soaked and pressed white bread (or 2 tablespoons of oatmeal), salt, pepper, oil for frying, a little garlic, chopped herbs.

Yeast pancakes

Put the mass in a saucepan, add yeast, diluted with half a glass of warm water, salt, add flour (you can also an egg). Mix everything and place in a warm place to rise the dough. Bake in a skillet that is very hot with oil. Serve hot with sour cream or butter.

For 500 g of pulp, 0.5 cups of wheat flour, 1 tbsp. l. butter, egg, salt.

Potato pancakes with sour cream and onions

Rinse the potatoes, peel them, finely grate or mince them. Peel the onion and also grate it on a fine grater.

Add beaten eggs, sour cream, soda, flour to the resulting mass. Mix thoroughly. Bake in a hot skillet, covered.

Required: 6 potatoes, 1 egg, 2 tbsp. l. flour, 1 large onion, 1 tbsp. l. sour cream, 50 g of vegetable oil, 4 cloves of garlic, soda on the tip of a knife, salt to taste.

Potato pancakes with sour cream or with soaked lingonberries

Add flour, salt to the mass and mix; fry in ghee or vegetable oil, like pancakes. Pour the finished pancakes with sour cream (milk can be served separately) or serve with soaked lingonberries in your own juice (boil the juice with sugar, without berries).

Required: 12 potatoes, 2 tsp. flour. 2 tbsp. l. oils, salt; sour cream or 200 g of soaked lingonberries, 3/4 cup granulated sugar.

Potato pancakes with cottage cheese

Flour, grated cottage cheese, egg and salt are added to the pulp; everything is mixed and fried in fat. Pour sour cream over the finished dish.

You need: 8 potatoes, 300 g of cottage cheese, 2 tbsp. l. flour, egg, 4 tbsp. l. sour cream, fat, salt.

Potato pancakes with bacon and onions

Pass potatoes, fresh bacon and onions through a meat grinder, add sour cream, eggs and a little flour. Mix everything thoroughly, salt. Fry over low heat in a pre-heated frying pan.

Required: 6-8 potatoes, 1 onion, 100 g lard, 1 tbsp. l. sour cream, 2 eggs, 1-2 tbsp. l. flour, salt to taste.

Potato pancakes with fish

Required: 8 medium-sized potatoes, flour - 4-5 tbsp. l., milk - 1/2 cup, egg - 2 pcs., vegetable oil for frying, salt - to taste, fish (salmon fillet without skin) - about 300 g.

Peel the potatoes, rinse and grate on a fine grater. To prevent the potatoes from darkening, they must be immediately poured with warm milk. A plate of grated potatoes can be set aside for a few minutes. Then drain the milk, squeeze the potatoes, season with salt to taste, add flour, egg, mix everything well.

Cut the fillet into small pieces, salt.

From the resulting potato mass, mold the flat cakes in half of the palm. Put several pieces of fish in the center of the cake and fold in half. Slap it so that the result is a cake with a fish inside.

Fry the pancakes in vegetable oil on both sides until golden brown. Serve hot potato pancakes with sour cream.

By the way, potato pancakes are considered quite satisfying food on the days of fasting. We did not violate the proposed recommendations for the preparation of these dishes, but we will not dissuade them from the desire of home cooks to somehow modify them depending on their personal taste preferences. The author himself, when "testing" various varieties of potato pancakes last summer - tried about 20 recipes - found that the following simplified modification is more suitable for him: add a spoonful of milk to a potato mass of 8-9 tubers (so that it does not darken), finely chopped and lightly fried separately in vegetable oil medium-sized onion, chopped 2-3 cloves of garlic, 2 tbsp. l. flour, egg, salt; mix everything, fry until golden brown. Serve with sour cream.

When I have to cook starch from potatoes, sometimes I use the leftover pulp for making "non-starchy" potato pancakes. Of course, they are no longer so tasty, and the first drain of water after washing the pulp is used to make soup.
