12 recipes for potato pancakes and pancakes

There are more than 600 dishes that can be prepared from potatoes, but in everyday life for quick cooking, they often get by with only 8-10 recipes, often according to the principle: "something faster and simpler." Many gourmets name potato pancakes, pancakes, and pancakes among their favorite foods. All these dishes are prepared from freshly grated tubers. What kind of dish will turn out as a result - it depends on what components will be included in the recipe.

It is no coincidence that potatoes are called "second bread" in our country. Dishes prepared from it are in constant demand. You cannot find such a garden, such a summer cottage, which would not have, albeit a small one, beds with potatoes. And, of course, many hundreds of hectares around St. Petersburg are also planted with this culture. Our breeders have created dozens of promising potato varieties. Based on this, I twice from the pages of the magazine turned to the city authorities and the Union of Gardeners with a proposal: to establish an autumn holiday in the city - Potato Day. Unfortunately, so far this appeal, supported by the editorial staff of the magazine "Flora Price", has not found a response. And yet there are some progress. On July 23, I had a chance to become a participant in the colorful and noisy holiday "Day of Young Potatoes",which was organized and hosted in the Central Park of Culture and Leisure by the potato chip firm Lays. On that day, the guests of the holiday heard a "sea" of praises in honor of the Russian "mother" - potatoes. Cheerful performances of clowns were replaced by serious contests - questions for the art and potato fans surrounding the stage. As they say, a start has been made. I hope that we will live to see the citywide holiday dedicated to this beloved culture.that we will live to see the city-wide holiday dedicated to this beloved culture.that we will live to see the city-wide holiday dedicated to this beloved culture.

Now let's return to those dishes that very often appear on our table. As a rule, unlike pancakes, bread yeast is often added to pancakes and pancakes. In my opinion, potato pancakes are very close in composition to pancakes, but in the former they try to introduce fewer components so that the potatoes prevail over the rest. These potato dishes are best cooked in thick-walled pans. If the pan was used for another dish or for some other purpose, then before baking it must be ignited with fat and salt, and wiped dry with a clean cloth. The pan used to bake pancakes should not be scraped with a knife. A modern non-stick frying pan does not require this preparation. When preparing pancakes and pancakes with yeast, you must carefully monitor the swelling of the dough. It should spread in a thin layer over the pan. The pancakes have a thicker consistency (almost like hard sour cream), so they put the dough in a pan heated with oil without spilling it all over the pan. Pancakes are much thicker than pancakes, they are fried on both sides.

There are a huge number of recipes for preparing these dishes. I would like to offer readers some of them. I tried some of them myself.

Potato pancakes stuffed with eggs

By the way, potato pancakes are considered quite satisfying food on the days of fasting. We did not violate the proposed recommendations for the preparation of these dishes, but we will not dissuade them from the desire of home cooks to somehow modify them depending on their personal taste preferences. The author himself, when "testing" various varieties of potato pancakes last summer - tried about 20 recipes - found that the following simplified modification is more suitable for him: add a spoonful of milk to a potato mass of 8-9 tubers (so that it does not darken), finely chopped and lightly fried separately in vegetable oil medium-sized onion, chopped 2-3 cloves of garlic, 2 tbsp. l. flour, egg, salt; mix everything, fry until golden brown. Serve with sour cream.

When I have to cook starch from potatoes, sometimes I use the leftover pulp for making "non-starchy" potato pancakes. Of course, they are no longer so tasty, and the first drain of water after washing the pulp is used to make soup.
