The season is over, the harvest has been harvested, including the harvest of potato tubers - one of the favorite products of Russians. There are more than 600 dishes that can be prepared from it, but in everyday life, for quick cooking, they often manage with only 8-10 recipes, often according to the principle: "Something faster and simpler." Many gourmets name potato pancakes, pancakes and pancakes among their favorite foods.
All these dishes are prepared from freshly grated tubers, the only difference is in additional components. As a rule, unlike pancakes, bread yeast is added to pancakes and pancakes. In my opinion, potato pancakes are very close in composition to pancakes, but in the former they try to introduce fewer components and in smaller quantities; with the expectation that the potatoes prevail over the rest.
These potato dishes are best cooked in thick-walled pans. A new frying pan, or if it has been used for another purpose, should be ignited with fat and salt before baking and wiped dry with a clean cloth. The pan used to bake pancakes should not be scraped with a knife. Modern cookware with non-stick coating does not require such preparation.
When preparing pancakes and pancakes with yeast, you must carefully monitor the swelling of the dough. It should spread in a thin layer over the pan. The pancakes have a thicker consistency (almost like hard sour cream): put the dough in a pan heated with oil without spilling it all over the pan. Pancakes are much thicker than pancakes, they are fried on both sides.
There are a huge number of recipes for these dishes and their modifications. Here are the most popular ones. First of all, the potato tubers must be thoroughly peeled and washed, quickly grated on a fine grater and squeezed out the liquid, avoiding darkening of the pulp (let's call the latter conditionally a potato mass).
Potato pancakes stuffed with eggs
Add flour, salt, pepper to the potato mass, mix everything and divide into flat cakes. In the middle of a thin flat cake (leveled with a spoon), put the minced meat from boiled and chopped eggs mixed with fried onions. Then you can either wrap the edges of the cake (give the shape of a ball), or cover the minced meat with a second potato cake; fry on both sides in a pan with heated vegetable oil until golden brown. Serve the prepared pancakes with fried cracklings and crushed garlic.
10 potatoes, 2 tbsp. tablespoons of flour, 1 tbsp. a spoonful of oil, 60 g of bacon, 2 cloves of garlic.
For minced meat: 4 eggs, 1 onion, 1 tbsp. spoon of oil.
Potato pancakes stuffed with mushrooms
Add flour, salt to the potato mass, mix. Rinse dried mushrooms, soak in water for 2-3 hours, cook. Finely chop the boiled mushrooms (you can lightly fry in vegetable oil). Cut lard (bacon) into small cubes, fry, add browned onion, 1-2 tablespoons of mushroom broth (broth) to make the minced meat more juicy. Put the potato mass into a frying pan with heated fat, minced meat on top, then cover the minced meat with potato mass. Fry pancakes on both sides, transfer to a pot, pour sour cream and bring to readiness in the oven.
10 potatoes, 2 tbsp. tablespoons of flour, 4 tbsp. tablespoons of sour cream or butter, 1/3 cup of mushroom broth, salt.
For minced meat: 30 g dried mushrooms, 80 g bacon, 2 onions.
Potato pancakes stuffed with fish
Add flour, salt, egg to the mass: mix. Pass the fish fillet through a meat grinder, fry with onions and boiled mushrooms, then add salt, pepper, finely chopped egg and mix everything. Put the potato mass in flat cakes on a hot pan, put the minced meat on them, cover with potatoes on top and fry until golden brown on both sides. Place in a pot, cover with oil and put in the oven. Sprinkle the finished dish with finely chopped herbs.
10 potatoes, 1 egg, 5 tbsp. spoons of oil, herbs, salt.
For minced meat: 250 g fish fillet, 15 g dried mushrooms, 1 egg, 2 onions, 2 tbsp. tablespoons of oil, pepper.
Potato pancakes stuffed with meat
Add flour, egg to the mass, mix. For minced pork mince pork, add fried onions, salt, pepper, mix everything. Put the potato mass in flat cakes on a hot frying pan, put the minced pork on each of them, and cover with the potato mass on top. Fry until golden brown on both sides, put in a roaster and put in the oven for 10-15 minutes. Serve the dish with fried bacon.
12 potatoes, 1 egg, 2 tbsp. tablespoons of flour, 100 g of bacon, 2 tbsp. spoons of oil.
For minced meat: 400 g pork, 2 onions, 1 tbsp. spoon of oil, pepper.
Minsk-style potato pancakes
Fry pancakes from the salted mass. Put the finished pancakes in a greased rooster, put them with lard, seasoned with salt and pepper with the addition of chopped garlic. Put the roaster in the oven for 20-25 minutes.
12 potatoes, 2 tbsp. tablespoons of vegetable and butter, salt.
For minced meat: 400 g of pork, 4 cloves of garlic, pepper.
Greened potato pancakes
The mass is mixed with eggs, a slice of white bread, moistened, squeezed and mashed with a fork, salt and pepper are added. In the pancake mass, you can put a little crushed garlic, as well as chopped herbs. This mixture is poured 1 spoonful into a frying pan with heated vegetable oil.
8 potatoes, 2 eggs, 1 slice of soaked and pressed white bread (or 2 tablespoons of oatmeal), salt, pepper, oil for frying, a little garlic and chopped herbs.
Yeast potato pancakes
Put the mass in a saucepan, add yeast diluted in half a glass of warm water. Then everything must be salt, add flour (you can also an egg), mix and put in a warm place (for raising the dough). Bake in a skillet that is very hot with oil. Serve hot with sour cream or butter.
For 500 g of pulp, 0.5 cups of wheat flour, 1 tbsp. a spoonful of butter, egg, salt.
Potato pancakes with sour cream or soaked lingonberries
Add flour, salt to the mass and mix; fry in ghee or vegetable oil, like pancakes. Pour the finished pancakes with sour cream (milk can be served separately) or serve with soaked lingonberries in your own juice (boil the juice with sugar, without berries).
12 potatoes, 2 tsp flour. 2 tbsp. spoons of oil, salt; sour cream or 200 g of soaked lingonberries; 3/4 cup granulated sugar.
Potato pancakes with cottage cheese
Flour, grated cottage cheese, egg and salt are added to the pulp; everything is mixed and fried in fat. Pour sour cream over the finished dish.
8 potatoes, 300 g of cottage cheese, 2 tbsp. spoons of flour, egg, 4 tbsp. tablespoons of sour cream, fat, salt.
By the way, potato pancakes are considered quite satisfying food on the days of fasting. We did not violate the proposed recommendations for the preparation of these dishes, but we will not dissuade them from the desire of home cooks to somehow modify them depending on their personal taste preferences. As for the author, the following modification is more suitable for me: add a spoonful of milk to the potato mass of 8-9 tubers (so that it does not darken), finely chopped and lightly fried (separately in vegetable oil) medium-sized onion, chopped 2-3 cloves of garlic, 2 tbsp. tablespoons of flour, egg, salt; to mix everything; fry until golden brown. Serve with sour cream.
When I have to cook starch from potatoes, I sometimes use the leftover pulp for making "non-starchy" potato pancakes, although they are not so tasty anymore, and the first drain of water after washing the pulp is for soup.
