Bean Dishes
Both the beans of milk ripeness and ripe seeds are eaten - this is already in winter.
Milk beans
Many delicious dishes are prepared from them, especially when they go to the kitchen directly from the garden.
Buttered beans. Boil the beans in salted water, remove, sprinkle with finely chopped dill and pour over heated butter. Milk bean seeds boiled in salted water with butter are very tasty. Dairy seeds or bean pods can be added to all summer vegetable soups.
Before cooking, the tips of the green beans (shoulder blades) are cut off, the fibers of the seams are removed from both sides, then they are washed in cold water.

Boiled beans with tomato sauce and cream. Chop the beans, or it is better to break them into pieces, boil until tender in salted water, drain in a colander. Prepare the cream sauce, heat the beans in it, without boiling. For 400 g of green beans: for the sauce - 1.5 cups of milk, 1.5 teaspoons of flour, 0.5 cups of cream, 0.25 cups of tomato puree, 1 tbsp. a spoonful of oil, salt.
Burgundy beans … Break the peeled pods of beans into 2 or 3 parts, simmer until tender in a little water. Add red wine and carrots, cooked separately and cut into slices. Season with salt, pepper, simmer everything together. Add greens. Fry the diced bacon and onion rings in a frying pan. Put the beans with carrots on a plate, top with the bacon with onions. This dish can be complemented with meat or steak. For 750 g of green beans, 250 g of carrots, 2 onions, 1 glass of red wine, 125 g of bacon, 2-3 tbsp. tablespoons of finely chopped herbs, salt, pepper.

Dishes made from ripe, i.e. dry, beans
For ripe beans to be edible, they must be properly cooked. One of the cooking methods is this. First, the beans must be soaked overnight to make them swell. Then cook for one and a half to two hours. The second way: bring the water, with which the beans are poured, to a boil, immediately drain it and pour it cold. Bring to a boil again, drain - and so several times, usually 3-4 times. If you wish, you can peel off the finished beans.
Stewed beans. Boil the beans until tender. Fry the chicken fillet pieces, add chopped onions and garlic, fry for another 5 minutes. Add chopped tomatoes, wine, tomato paste, boil for 5 minutes. Add honey, vinegar, beans, salt, pepper. Simmer for 30 minutes. Sprinkle with chopped herbs before serving. Beans - 150 g, chicken fillet - 500 g, tomatoes - 400 g, wine - 1.5 cups, tomato paste - 3 tablespoons, honey - 1 tablespoon, the rest to taste.
Bean dumplings. Pass the boiled beans through a meat grinder. Mix the mixture with soaked and squeezed bun, finely chopped onions, add egg, salt, pepper, herbs. Stir, make dumplings, roll in crushed breadcrumbs, fry on both sides. You can substitute half a serving of beans with potatoes. Beans - 250 g, 1 bun, 1 onion, egg, salt, pepper, herbs: basil, marjoram, thyme, crushed crackers.
