I love tomatoes and always grow them in sufficient quantities for salads and for winter preparations. Here are my favorite recipes in which I use tomatoes. I hope you try to cook them, and I'm sure you won't regret it. So
Salad "Winter"
You need to cut 3 kg of tomatoes, like a salad (in small slices), 1 kg of carrots - grate on a coarse grater, 1 kg of onion - chop, 1 kg of pepper - cut into strips. Mix everything, pour with brine. For him you will need: 1 glass of granulated sugar, 100 ml of vegetable oil, 3 tablespoons of salt. Cook for 20 minutes from the moment of boiling, then pour in 50 ml of 9% vinegar and cook for another 10 minutes. Arrange the salad in sterile 0.5 l jars and roll up with sterile lids. Wrap up the jars and keep until they cool completely.

Bulgarian salad "Manzha"
Tomatoes - 3 kg mince. Eggplants - cut into circles, sprinkle with salt to remove the bitterness, squeeze out after a while, drain the juice. Sweet pepper - 2 kg cut into strips. Onion - 1 kg cut into half rings. Carrots - 300 g, garlic - 1 head, peel, add 1 hot pepper, pass everything through a meat grinder. Combine everything, add salt - 100 g, sugar - 100 g, 9% vinegar - 100 ml, ground black pepper - 0.5 teaspoon, vegetable oil - 200 ml. Mix the components well. Simmer for 40 minutes, roll up in sterile jars, wrap.
Canned tomatoes
Cut the tomatoes into slices, put in liter jars, add a few onion rings on top, on a sprig of dill or basil, pour the marinade. Here is its composition: for 3 liters of water - 6 tablespoons of sunflower oil, 6 tablespoons of salt, 7 tablespoons of sugar, 1 tablespoon of 9 percent vinegar. Boil the marinade before pouring. Sterilize the jars at a low boil for 20 minutes.
Natural Tomatoes
Take cream tomatoes, cut them into 4 pieces, put them in liter jars with a cut down, pour boiling brine (for 1 liter of water - 1 tablespoon with a slide of salt, 4 tablespoons of sugar). Sterilize the tomato jars for 20 minutes.
Lecho natural
Pass 3 kg of tomatoes through a meat grinder, 3 kg of sweet pepper - cut into strips. Boil tomato sauce from skipped tomatoes for 10 minutes, then add sweet pepper, salt - 2 tablespoons, granulated sugar - 1 glass. Cook for another 20 minutes, at the end add 1.5 tablespoons of vinegar essence, bring to a boil, pour into sterile jars. Roll up. Wrap until cool. Simple and delicious!
Sauce for the winter
Tomatoes that are overripe do not have a presentation. Break them in a blender or pass through a meat grinder, pour into a saucepan, add salt to taste (a little). Boil until the foam disappears, about 20 minutes, pour into sterile jars (0.5-0.6 liters), roll up, wrap. In winter, add to meat when stewing, in first courses, etc.
