Preparing winter supplies
The housewives at the dacha now have the most stressful time: they are harvesting vegetables, fruits and berries grown in difficult weather conditions and preparing supplies for the winter. We hope that many will like the recipes suggested by our readers.
Marinade: 5.5 liters of water, 0.5 liters of 9% vinegar, 200 g of salt, 400 g of sugar. Boil everything (the recipe is designed for 4 three-liter jars).
The tomatoes should be red and firm. At the bottom of the jar, put 5-8 black peppercorns and 3-4 bay leaves. On the wall of each jar, lay out several branches of parsley, bell pepper, cut lengthwise into 2 or 4 pieces (without seeds), and 1-2 carrots, cut into long slices. Fill the jar with tomatoes and pour boiling water for 15 minutes, wrap it up. Then we drain the water, put half of the hot pepper, 1-2 cloves of garlic on top of the tomatoes and fill it with hot marinade. Roll up and wrap for slow cooling.

Take 2.5 kg of tomatoes, 0.5 kg of sweet pepper, 100 g of hot pepper, 150 g of garlic, 250 g of horseradish root.
Grind all this in a meat grinder. Then add 1.5 cups of vinegar, 0.5 cups of salt, 1.5 cups of sugar. Mix everything well and put in jars. Keep refrigerated.
2.5 kg of red tomatoes, 1 kg of apples (Antonovka), 1 kg of carrots, 1 kg of sweet pepper.
Pass everything through a meat grinder. Add 1 cup vegetable oil, 1 cup granulated sugar, 1/4 cup salt. Put the mixture in an enamel saucepan and simmer, stirring occasionally, for 1 hour. Remove from heat, cool. Then add 1 glass of minced garlic, 2 pods of hot pepper. Pack cold adjika in 0.5-liter jars, seal with plastic lids.
Tomatoes - 5 kg, onions - 0.5 kg, carrots - 0.5 kg, sweet (Bulgarian) pepper - 0.5 kg, apples - 0.5 kg, garlic - 0.3 kg, 3-4 pcs. hot pepper, 0.5 l of sunflower oil (preferably aromatic), salt to taste.
Pass everything through a meat grinder and cook for 2.5 hours. Pour the prepared adjika hot into jars, roll up. Stored well. This recipe will make about 7 liters of delicious adjika.
You will need: 10 pcs. medium eggplants, 10 pcs. bell pepper, 10 onions, 10 pcs. medium tomatoes, 5 heads of garlic.
Boil the marinade from 2 cups of vegetable oil, 0.5 cups of 9% vinegar, 1 tbsp. tablespoons of salt (with a slide). Then pour this marinade into a large saucepan or enamel bucket, bring it to a boil and add the products strictly according to the list: eggplants, cut into 6-7 parts; pepper, cut into 4 parts; onions - into 4 parts; disassemble the garlic into cloves, cut the tomatoes into 2-4 pieces. Simmer for 1 hour under a tightly closed lid. Place in warm sterilized jars and roll up. In the finished form, vegetables should be whole pieces. No need to sterilize!
Green tomato salad
You will need: 4 kg of green tomatoes, 1 kg of bell pepper, 1 kg of carrots, 1 kg of onions, 1/2 cup of salt, 2 cups of sunflower oil, 1 cup of sugar.
Cut the tomatoes into rings. Cut carrots, onions, peppers into strips. Pour in salt and mix everything. Leave to stand in a basin for 6 hours. After that, squeeze the vegetables from the juice, drain the juice. Add 2 cups of hot sunflower oil, 1 cup of sugar and mix everything. Then put in jars and sterilize for 15 minutes, then roll up in glass jars.
Canned Rice Salad
Tomatoes - 3 kg, bell peppers - 1 kg, onions - 1 kg, granulated sugar - 200 g salt - 2 tablespoons (or a little more), half a liter of vegetable oil, half a kilo of rice. Add various herbs, spices, carrots - to taste.
Cook the rice separately until half cooked. Chop the rest, mix, cook for 20-25 minutes. Add rice to vegetables and cook for another 10 minutes. Put the hot salad in jars, roll up and wrap until it cools completely.

Tomatoes - 3 kg, bell peppers - 6 pieces, garlic - 6-7 cloves, granulated sugar - 1 glass, salt - 1 tablespoon.
Cut half the tomatoes and all the peppers into strips and place in a saucepan. Put chopped garlic there. Cook everything for 10 minutes, then put the rest of the tomatoes, salt and sugar there. Cook for another 10 minutes. Roll up hot.
Cucumbers under a nylon lid
Pick up green dill and horseradish leaves. Wash, cut and place on the bottom of a three-liter jar. Select cucumbers of the same size and wash in cold water. Place tightly in a jar. Add 2-3 bay leaves, 2-3 cloves of spring garlic, 1 clove of winter garlic. Pour in 1 incomplete glass of salt (30-40 g) and cover with water. Close the lid tightly and put in a cool place.
4 kg of sweet pepper, 4 kg of white cabbage, 1 kg of carrots.
Marinade: for 1 liter of water - 300 g of sugar, 200 g of vinegar, 300 g of vegetable oil, bay leaf, peppercorns. Do not add salt to the marinade !!!
Chop the cabbage, grate the carrots, add a little sweet pepper, cut into strips. Salt everything well. Fill the peppers with minced meat, put them vertically in a saucepan, pour the marinade over the peppers. After boiling, let it boil for exactly 5 minutes. Fold the peppers vertically in three-liter sterilized jars, quickly roll up and wrap them for a day.
Vegetable salad (no vinegar)
1.2 kg of cabbage (chop), 600 g of onion (cut into half rings), 600 g of carrots (grate), 600 g of sour apples (cut into thin slices), 600 g of sweet pepper (cut into strips), 1 tbsp. a spoonful of fine salt.
Salt vegetables, mix gently. Put 1-2 bay leaves, 5 peppercorns, 2 tomatoes in a jar (cut into 4-8 pieces). Fill the jars tightly with lettuce to mash the tomatoes. Sterilize half-liter jars for 30 minutes. In total, you get 8 half-liter cans.
