If you turn your gaze to national culinary books, then there are many leek dishes. It has a very rich flavor and spice, without the excess pungency and bitterness found in most onions. Starting from the simplest and fastest to prepare, and ending with exotic delicacies, which, according to the descriptions, can be cooked for probably two days at least.

For example, how would you like “Salmon rolls with leeks and buckwheat pancakes with red caviar and sour cream sauce” served in one of the Moscow restaurants? I, personally, from the name immediately realized that I would not cook this dish for any price. Therefore, I will give you something faster and simpler. By the way, you can safely add leek to any vegetable, meat or fish dish: the taste of the dish will only improve.

Stewed leek

Cut the cooked leek into slices of about 4 cm. Melt the vegetable oil in a pan (it is better to add a little butter at the end of cooking), put the leeks and stir. Add pepper and salt to taste. Simmer on very low heat, covered for about 10 minutes. Sprinkle with parsley before serving. It works well as an addition to, for example, regular mashed potatoes.

Turkish leek

Chop a large onion and fry in vegetable oil until golden brown. Then add 400 g of leeks, cut into pieces, pour in 1/4 l of chicken or meat broth and simmer under the lid until half cooked. Then add 100 g of rice to the onion and continue simmering over low heat, covered, until cooked. Then add butter and salt to taste.

Potato and leek puree soup

500 g of potatoes, 5 stalks of leeks, 3 cups of broth, 1.5-2 cups of milk, 2 tbsp. butter, for the final dressing 2 egg yolks and half a glass of milk.

Chop the leeks, lightly fry in oil, add peeled, washed and sliced potatoes, pour 3 cups of broth, add salt and cook for 25-30 minutes.

Rub the boiled potatoes with the broth through a sieve, add hot milk and stir. Before serving, season the soup with butter and egg yolks mixed with milk. Serve the croutons separately.
