My favorite eggplant dishes
Eggplant soup
I chop parsley, fennel, carrots, onions and lightly fry, potatoes with shavings or slices, I put everything in boiling broth and salt.
I bake the eggplants, remove the skin, cut into slices and put them in the soup with fresh tomatoes 10 minutes before the end of cooking.
Serve with sour cream and herbs.
