Due to its low acidity, the juice from the yogurt is usually prepared with the addition of red or white currant juice. Then they are crushed, the pulp is pressed, squeezing out the juice, which is then heated to 80 ° C and poured into prepared bottles.
The prepared fruits are blanched in boiling water for 2 minutes. Then it is transferred to hot 60% sugar syrup and gradually brought to a boil. Remove from the stove and leave for 8 hours, then cook. At the end of cooking, add 1 g of citric acid per 1 kg of fruit. For 1 kg of fruit, 0.5 kg of sugar is consumed.
The cooked fruits are blanched in boiling water for 2 minutes and filled into 1/2 glass jars. Pour in hot 30% sugar syrup. You can add citric acid up to 3 g per liter. Pasteurize and cork.
Blackcurrant juice is used in a volume of 35%, irgi juice - 25% and 25% sugar syrup in a volume of 40%. Mix well, pasteurize and pour into cans and bottles.
