Leaf celery does not have a developed root crop; it is cultivated to obtain fortified leaves during the summer-autumn period. They are dried for the winter and added to food for flavor and taste.
Petiolate celery is grown to obtain fleshy stalks, their thickness is up to 3-5 cm. This type of celery also does not form root crops. Petioles and leaves are eaten.
All varieties of celery have a long growing season, they need 170-180 days, so to get a large root vegetable, root celery is grown only through seedlings.
I sow celery seeds in boxes filled with a mixture of turf and humus. I do not sprinkle the sown seeds with soil, since light is needed for their germination. After sowing, I compact the seeds, gently water and cover with glass or film until the seeds germinate. The optimum temperature for growing seedlings is 15 … 18 ° C.
Caring for celery seedlings mainly consists of moderate watering. Grown plants with two real leaves I dive into peat pots or paper cups. At the same time, the seedlings are immersed in the soil for 1/2 of the stem. After picking, after 15 days, I feed the seedlings with fertilizers. The best varieties of root celery that I have grown, I consider the varieties Egor, Esaul, Albin and Russian size - these varieties give root crops up to 800 grams. Varieties Danish Giant and Diamant form root crops up to 2 kilograms, but I do not grow these varieties now, because turnips weighing up to one kilogram are more convenient on the farm.
Root celery is used to make vegetable soups and salads. It gives a pleasant taste to side dishes, egg dishes and grilled meats. The root is stewed, fried, added to minced meat for cutlets and dumplings. Root celery can be dried and used as a condiment mixed with other spices. For the winter, when fermenting cabbage, I add beets, carrots, celery root, as well as various greens to it. It turns out to be an excellent borsch dressing.
