The best varieties of root celery that I have grown, I consider the varieties Egor, Esaul, Albin and Russian size - these varieties give root crops up to 800 grams. Varieties Danish Giant and Diamant form root crops up to 2 kilograms, but I do not grow these varieties now, because turnips weighing up to one kilogram are more convenient on the farm.
Root celery is used to make vegetable soups and salads. It gives a pleasant taste to side dishes, egg dishes and grilled meats. The root is stewed, fried, added to minced meat for cutlets and dumplings. Root celery can be dried and used as a condiment mixed with other spices. For the winter, when fermenting cabbage, I add beets, carrots, celery root, as well as various greens to it. It turns out to be an excellent borsch dressing.
